Ingredients

1 tsp olive oil
1/4 cup onion, diced
1/2 cup cabbage, chopped
1/4 cup carrots, sliced or diced
3 oz turkey breast
2 oz diced tomatoes
1 tbsp dry quinoa
1/2 tsp each thyme
1/4 tsp garlic powder
1/4 tsp chili powder (optional)
1/2 cup low sodium vegetable broth
1 cup water
Salt, black pepper, to taste

Preparation

In a large pot or dutch oven, heat 1 tablespoon oil add onions, carrots and celery, saute for 2 minutes, add all the ingredients, bring to a boil, cover, turn heat to low and simmer for 20 to 30 minutes (you can add more water if needed), . Taste for seasoning, adding salt and pepper to taste. Serve hot.

Ingredients

1 tsp olive oil
1/4 cup leeks, white and light green parts only, cut into ¼-inch rounds
2.5 oz chicken breast
1/2 cup reduced-sodium chicken broth
1 cup water
2 sage leaves
1/3 cup canned white beans, rinsed

Preparation

Heat oil in a pot or Dutch oven over medium-high heat. Add olive oil and leeks and cook, stirring often, until soft, about 3 minutes.
