Badi or Vadi in Kumaon are small sun dried dumplings made with various spices, lentils & greens. They are sun dried on roof tops and stored for later use in the kitchen. One of the dishes which I explored with this #Pahari #Badi is Badi ki Subzi.
This badi is made of dried stems of arbi (colacassia), arbi leaves, maash dal, garlic & coriander. This dish is best cooked in mustard oil and goes well with #Madua Roti (ragi flour bread).
