Bharli Vangi Recipe | Stuffed Brinjal Masala | Eggplant Curry | Baingan Masala by Kabitaskitchen

Ingredients:
Baby eggplant/baby brinjals/aubergines(washed)-400 gm
Roasted peanuts powder-50 gm
(roast the peanuts for 2-3 minutes then discard the skin
and coarsely grind it)
Ginger(peeled and chopped)-2 inch
Garlic(peeled)-8 to 10
Onion(chopped)-1 (large)
Tomato chopped)-1(large)
Cumin seeds-1/2 tsp
Mustard seeds-1/2 tsp
Turmeric powder-1/2 tsp
Red chilli powder-1 tsp
Cumin powder-1/2 tsp
Coriander powder-1/2 tsp
Garam masala powder-1/2 tsp
Salt to taste or 1.5 tsp
Cooking oil-4 to 5 tbsp
Coriander leaves for garnish
