Cashew nut or kaju is a very healthy nut & both the fruit and the nut is used. The cashew fruit along with its shell hangs from the bottom of the fruit and in order to remove it just twist it.
Once it is removed it is roasted in fire to crack open the shell to get the soft cashews or kaju as we call them. The goans use cashew fruit to make #Feni which is a local alcoholic beverage.
