I used one whole eggplant and if I think it’s too much to be all included in the omelette, then I’ll have it as a side. Use preferred amount of eggs for yourself. I added garlic as well.
The key to cook an omelette is to have a good pan. lol. Just bought my pan and it’s so good!
I had steel cut oats as my pre workout snacks. Added a banana and some maple syrup too.

Salmon (1 servings each)
Buckwheat Noodle (Soba)
Capsicum/ red bell pepper
I cooked my salmon in the oven first for 9 minutes on fan grill. It is just so much easier than cooking on the pan.
Stir fry the onions and garlic. Add capsicum and let it cook for a couple of minutes. Add the noodles, then kale. Add some pink salt, and pepper. I added a bit of soy sauce which is optional. Then add the cooked salmon and mix it all together. It was super tasty!
