Dum Mutton Curry | Dum Mutton Recipe | Dum ka Mutton Hyderabadi | Dum ka Gosht Hyderabadi wala

Ingredients:

– Mutton with bones – 750gms
– Curd-200ml
– Onions, sliced fine & fried crisp (birista) – 4 medium
– Coriander leaves, finely chopped- 1 bunch
– Mint/ Pudina leaves, finely chopped-1 bunch
– Green chilies, slit- 4
– Ghee (clarified butter) – 4 tbsp
– Salt to taste

Whole garam Masala :
– Green cardamom – 4
– Cloves- 4
– Cinnamon-2 pieces

For the Red Chilli paste-

– 8 dry red chillies
– 3 tsp poppy seeds (khus khus), lightly roasted
– 1″ piece ginger, roughly chopped
– 10 cloves of garlic

Preparation:

– Slice the onions finely & fry in hot oil till crisp (birista)
– Make a paste of the items indicated for the red chilli paste in a mixie/ blender
– Chop the coriander & mint leaves & slit the green chillies

Marination:

Add the following to the mutton,
– Beaten curd
– Red Chilli paste
– Chopped coriander leaves
– Chopped mint leaves
– Crushed fried onions
– Salt to taste
Mix well & keep aside for around 2 hrs

Process :

– Take a heavy bottomed pan & spread the marinated meat evenly.
– Now take a tempering spoon & add ghee. Once the ghee is hot add the whole garam masalas & allow it to splutter.
– Pour this hot ghee with the garam masalas over the meat evenly.
– Arrange the slit green chilies
– Mix everything well and switch on the flame/heat.
– Cover and cook for 15 mins till steam builds up.
– Lower the flame to minimum and cook in “DUM” for 60-90 mins till the meat is tender.
– After 60 mins. if the meat is still tough, you may pressure cook it for 1-2 whistles.
– Serve hot with roti or rice.
