HOW TO MAKE MINT BROWNIES | Maldon Salted Mint Brownies

-1 LB Salted Butter (4 sticks)

-4oz unsweetened bakers chocolate https://amzn.to/2EOc3OJ
-6 large Eggs
-1TB Almond Emulsion https://amzn.to/2EZ8rtp
-6 to 8 drops Peppermint Vitality Essential Oil LINK BELOW
-1TB Kosher Salt
-1TB Baking Powder
-1 Cup All Purpose Flour

Preheat oven to 350 degrees. Line with parchment, spray pan, lay parchment, spray parchment of a 18 by 13 by 2 in sheet pan. https://amzn.to/2EOOG7I
If you do not have a large sheet tray then half recipe and bake in 8×13.

Melt butter, then add chocolate into double double boiler.
In large bowl, stir (do not beat) together eggs and sugar.
Once chocolate is melted, remove from heat and let cool. Add chocolate and egg mixture slowly to prevent the egg from curdling.
Once combined, add almond emulsion and Peppermint oil, mix.
Add Salt and Baking powder, combined. Then add flour. Fold in. Do not over mix. There will be lumps.

Bake for 20 minutes, then rap the baking sheet against the oven shelf to force excess air out of brownies. Bake for another 10-15 minutes until a toothpick comes out clean. Allow to cool, refrigerate and then cut into large squares.
