Kadai Vegetable Recipe | Veg Kadai Recipe | Kadhai Vegetable | Vegetable Kadhai Sabzi | वेज कड़ाही | Veg Kadai

Kadai Vegetable is made with mixed vegetables tossed in onion & tomato gravy base flavoured with freshly ground kadai masala.

Ingredients:

– Carrots, 1” pieces- 1/2 cup
– Beans, 1” pieces- 1/2 cup
– Cauliflower florets- 1 cup
– Potato cubes- 1/2 cup
– Green peas- 1/2 cup
– Paneer small cubes- 50 gms (optional)
– Capsicum cubes-1/2 cup/1 small
– Onion petals- 1 small
– Cumin seeds- 1 tsp
– Whole red chillies- 2
– Turmeric powder- 1/4 tsp
– Kashmiri Chilli powder- 1/2 tsp
– Garam Masala Powder- 1/2 tsp
– Kasuri Methi,crushed- 1 tsp
– Onions, fine chopped- 2 small
– Ginger garlic paste- 1.5 tsp
– Tomato purée of 2 medium sized red tomatoes
– Salt – 1 tsp salt
– Oil- 3 tbsp oil + 1 tbsp for sautéing the onion & capsicum
– Cream- 2 tbsp
– Coriander leaves chopped- 3 tbsp

For Kadai Masala:

– Coriander seeds- 2 tsp
– Cumin seeds- 1 tsp
– Fennel seeds- 1/2 tsp
– Peppercorns- 1/2 tsp
– Whole red chillies- 2 nos.

Preparation:

– Roast the items for Kadhai Masala in a pan on low flame for a minute. Cool & grind to a powder to make Kadai Masala.
– Boil the vegetables in a pan till half done. To do that, boil the water & add the beans, carrot, green peas & potato cubes & boil for 4 mins.
– Strain the vegetables & run cold water on them to stop the cooking & to retain the colours.
– Purée the tomatoes or alternatively use store bought tomato purée.
– Sauté the capsicum & onion petals in a pan, remove & set aside.
– Cut the paneer into very small cubes.

Process:

– Heat oil in a kadhai & add 1 tsp of cumin seeds.
– Allow it to splutter & then add the red chillies.
– Turn it once & add the chopped onions. Fry on high to medium flame for around 5-6 mins till it is light brown in colour.
– Add the ginger garlic paste & fry for around 2 mins till the raw smell is gone.
– Now add the tomato purée & fry on medium flame for around 2 mins till it is soft & oil separates.
– Add the turmeric powder,mix well & then add the Kadai masala. Fry it & add a splash of water.
– Fry it for another 2 mins & then add the boiled vegetables. Mix well & sauté for 2 mins.
– Add the Kashmiri Chilli powder, mix well.
– Add the paneer cubes, mix & sauté for 2 mins.
– Now add the sautéed onion & capsicum, mix well & cook for a minute.
– Next add kasuri Methi, garam masala powder & cream, one after another. Mix well & add 1/2 a cup of water. Cover & cook for around 5 mins .
– Lastly add chopped coriander leaves, mix & cook.
