Mutton Kurma – Recipe
Ingredients:
Pressure Cooker :
Oil – 2 tsp
Mutton – 250 g
Turmeric powder – 1/2 tsp
For Grinding :
Oil – 1 tsp
Shallots – 100g
Tomato – 2
Fennel – ¾ tsp
Poppy seeds – 1/8 tsp
Star Anise – 1
Cinnamon – 1
Clove – 5
Coconut – 1 cup
For Seasoning :
Oil – 2 tsp
Mustard seeds – ¼ tsp
Ginger garlic paste – ¾ tsp
Turmeric powder – ¼ tsp
Mutton masala – 2 tsp
Red chili powder – 1 tsp
Coriander powder – 1 tsp
Salt to taste
Few curry leaves
Preparation
1. Add oil in pressure cooker and add mutton and turmeric. Pressure cook for 5 whistles.
2. Keep aside and separate mutton and broth.
3. Heat oil in pan, add shallots, tomato, fennel, star anise, cinnamon, poppy seeds.
4. Sauté well and the let it cool then add grated coconut. Grind it as paste.
5. Heat oil in pan add mustard seeds, curry leaves, mutton(boiled), coriander powder, red chili powder, turmeric, mutton masala and mutton broth. Close the lid and simmer 10mins.
6. Garnish with curry leaves and coriander.
7. Now ready to serve. Happy cooking!!
