SWEET MASH POTATO RECIPE | Russet Potato, Red Potato, & Yam

This is all about how to make sweet mash potatoes. I use a combination of Russet potatoes, Red potatoes, and a yam potato. The yam and the sweet potato often get confused in reference, however, this recipe is using a YAM for the orange color and its sweetness, whereas a sweet potato is not orange in color, it is however still sweet. This is not an overly sweet potato recipe but rather a mash potato recipe that i add yam to for additional color, flavor, and interest. By including russet potato you still get that starchy mash potato that everyone loves and by including the red skin potatoes you still get texture and added vitamins. I make these almost every Sunday dinner and of course these are a staple at Thanksgiving dinner. All my cooking is done to taste and texture, especially with mash potatoes but I will write a recipe to begin and then please taste and adjust seasoning.

SWEET MASH POTATO RECIPE
1 LB Russet Potato
1 LB Sweet Potato (Yam)
3 LBS Red Potato
1 Cup Whipping Cream
1 Stick Butter
2 tsp Kosher Salt
2-3 drops rosemary vitality oil
1 drop black pepper vitality oil

1. Peel and cut up Russet and Sweet Potatoes to same size.
2. Wash red potato, don’t peel. Cut to same size as other potatoes.
3. Fill heavy pot with COLD WATER. Salt water, (this is extra salt for water 2 TB)
4. Add potatoes.
5. Bring pot to a boil.
6. When a knife easily slides through potatoes in water without resistance, potatoes are done. Be careful to not overcook.
7. Take pot off of heat.
8. Drain pot reserving potatoes. I keep and mash potatoes in same pot.
9. Mash potatoes.
10. Heat butter and cream in microwave safe dish, or if you are lazy just dump them into hot potato mash, they will melt.
11. This is when you add salt to taste, and adjust for cream and adequate butter. I will add a little more salt or cream or butter depending on what I feel it needs that day. Do not over mash or mix. Switch to a spatula for incorporating additional ingredients. The more you mix potatoes the more their starch will develop and the last thing you want is gummy potatoes, so don’t over mix.
12. Add oils and mix one last time to combine. Serve hot.
